RAW VEGAN CARROT CAKE! 🥕🥕🥕

~raw  vegan ~gluten free~oil free~ I feel like carrot cake is one of those desserts that people either love or hate...well i don’t know about you but I love it 😍 another thing I love is raw vegan desserts, combine that and you have a raw vegan carrot cake!!!! Not only are raw vegan desserts super nutritious, and satisfying, but they are easier when it comes to measuring because you can use your own judgement for amounts of ingredients, no need to make precise measurements because lets be real, it can’t be messed up! Okay so here’s the ingredients :) BASE: Dates Water Carrot Walnuts Coconut sugar Cinnamon Nutmeg Ginger CASHEW FROSTING: Cashews Date syrup Vanilla Almond milk Sprinkled with coconut shreds Instructions: First begin by blending carrots until finely chopping in the food processor, next add in the dates (I use the already pitted ones for big desserts), add a splash of water to get things going and a couple more splashed as needed! Once the texture becomes a little smoother, add in a sprinkle of coconut sugar, cinnamon, nutmeg (I think I added too much nutmeg I suggest putting more cinnamon than nutmeg), a very light sprinkle of ginger powder (optional), and a sprinkle of crushed walnuts to add some crunch! Pour this mix into parchment paper, then put it in a pan of choice! I used a circle cake shaped one! Then stick in the freezer until chilled/firmed! Now onto the frosting! Anyone else love creamy rich frosting?😍 so for this cashew frosting you can either buy cashew butter (just make sure it only has cashews!), OR you can make your own like I did! Just put raw cashews in a food processor and add a splash of almond milk or any nut milk of choice, blend blend blend! Blend until it gets more creamy like nut butter! Then either use a splash of vanilla extract or raw whole vanilla bean like I used (although I don’t think I did it right LOL). Next add in date syrup until sweetened to liking (or any other plant based sweetener of choice like maple syrup, coconut nectar, agave, I just love date syrup because of the low glycemic index!) After the frosting is done, stick it In the fridge to chill! After everything is cooled and chilled, remove ‘cake’ base from the tin and put the frosting on! Lastly, sprinkle coconut shreds and some more walnuts! Oops I forget a step...ENJOY😍
